Lies & chatter
There is one Carnival sweet that can be found almost everywhere in Italy, particularly in the North and the Centre, though under different, evocative names. Bugie (“lies”) and chiacchiere (“chatter”) are thin sheets of dough cut into ribbons, fried until crisp and golden, and delicately dusted with powdered sugar. Light, airy and delicately crunchy, they are distinguished by their characteristic bubbles and fragile texture. Made with simple ingredients, yet irresistibly festive.
Castagnole
Another beloved Carnival treat is made in the shape of small, bite-sized balls. These sweets date back to the 18th century: in Viterbo, about an hour from Rome, historical recipes describe four variations prepared with flour, butter and eggs, shaped into chestnut-sized balls, then either baked or fried. Once cooked, they are finished with a sprinkle of sugar or a drizzle of honey: humble in origin, but rich in tradition.
Migliaccio
The original recipe of this traditional Carnival dessert dates back to a time when simplicity defined Neapolitan peasant cuisine. Its name, migliaccio, derives from miglio (millet), an ancient grain valued for its nourishing properties and widely used in humble rural cooking. Over time, the recipe evolved, and millet was replaced with semolina, which gives the cake its smooth, velvety texture. Simple in origin yet refined in flavor, migliaccio perfectly embodies the transformation of modest ingredients into a celebratory Carnival delicacy.
